Natasha Hansson, Founder and Cake Designer at Lily May Cake Design shares advice on choosing your wedding cake, reveals the latest trends in cake design and extends a special offer to all Bride Tasmania readers.
What are some of the things couples should consider when they’re choosing their wedding cake?
Definitely the four elements to consider are style, colour, size and taste. Couples should also include the wedding cake in their budget.
In terms of style and colours, the cake should fit the personality of the bride and groom, and also take into account the styling of their reception. Both of these elements can easily be incorporated into the cake by including flower arrangements, cake toppers, ribbons and the base colour of the cake itself.
The overall size of the cake is dependent largely on two factors, the number of guests and whether the cake will be served as the only dessert or if it will be accompanied by other desserts.
The taste of your cake is paramount, not only should your cake look amazing but it should taste even better. We recommend asking your cake designer if you can book in for a tasting of your preferred flavours.
Costs of wedding cakes do vary and is dependent on the flavor, style and size. It’s important to not only compare quotes from various designers but to review their previous work and testimonials from other couples.
What are some trends you are seeing when it comes to wedding cakes?
Fresh flower toppers and arrangements are definitely making a comeback this year, along with lace and gold and silver leaf.
How did you get started in the industry?
I’ve always had a passion for baking and I started decorating not long after my own wedding where my sister in law made our wedding cake. The process fascinated me and I desperately wanted to learn as much as I could.
Since then, I’ve been lucky enough to travel to Sydney regularly to learn from arguably some of the best cake decorators in Australia.
Lily May Cake Design was born out of my passion for creating beautiful cakes.
What’s your favourite part of your job?
There are so many parts to my job that I love. I think it’s wonderful to take simple quality ingredients and turn them into a beautiful cake. There are lots of hours in between but when you stand back and look at the end product it’s a special feeling.
It’s so nice to be able to meet all of my clients and I’m so honored to be able to play a small part in making each couples wedding day that little bit more special.
What is something unique to your service that you are especially proud of?
I hope it’s not unique to us but I’m proud of the level of service and the standard of cakes that we provide.
We continuously invest in training courses and often travel to Sydney to learn from some of the best decorators that Australia has, so that we can bring this knowledge back to Tasmania and provide our couples with wedding cakes that surpass their expectations.
We firmly believe in providing wedding cakes that are flawless in their design and we also believe that the taste of the cake is just as, if not more, important that the look of the cake. That is why we bake all of our cakes fresh to order using only the highest quality ingredients that we can source, including Tasmanian butter and cream, free range eggs and the best Swiss coverture chocolate.
We understand that planning a wedding can be stressful but we strive to provide an enjoyable and uncomplicated experience for couples when ordering their wedding cake from the very first time that couple contacts us. We’ve been known to send a cake care package to a couple in Sydney as they couldn’t attend a tasting and they were thrilled that this was just part of the service.
To ensure that each cake which leaves our kitchen is perfect and meets our high standards we will only ever complete one wedding cake a week. Our couples deserve that level of attention to detail.
So apart from our personal service, attention to detail and an immense passion for what we do, couples will receive a cake that does really taste as good as it looks.
What advice would you give to brides and grooms to ensure their wedding day runs more smoothly?
My advice would be to be organised well in advance; we have bookings for wedding cakes for February 2016 so it’s never too early to start looking at ideas for your wedding cake.
